Recipe: Beef and Vegetables with Tomato Rice

I am all for nourishing my children with the foods they love and it would seem that rice is their favourite at the moment as they can't seem to get enough of Risotto of Fish and Vegetables. Here's another recipe I made up over the weekend. Once again, they ate it with gusto and even my husband loves it!

Beef and Vegetables with Tomato Rice
2 cups of Jasmine Rice
500g organic beef mince
1 brown onion, diced finely
1 celery stick, diced finely
1 zucchini, diced finely
3 carrots, diced finely
250g spinach leaves, sliced finely
1 litre salt reduced beef stock
2 tbsps tomato paste
1 tbsps butter
2 tbsps extra virgin olive oil

Instructions
In a deep stainless steel pot, add butter and olive oil. Brown all the vegetables and beef until well-sauteed. This should take about 10 minutes.

Add rice and stir well. Add all the beef stock. Boil on high for 5 minutes and turn to low to simmer for at least 30 minutes.

Add tomato paste, mix well. Add a little water, stir in spinach leaves, mix well and cover for 5 minutes.

Special Instructions
Serve with grated cheese, optional.

This meal can be frozen and re-heated in the microwave.
