This on-the-spot made up meal was derived from what was left in my fridge and also inspired from one of their favourite meals, Shepherd's Pie. This is super easy (nothing's ever complicated with me, have you noticed?) and they enjoyed it! *phew*
Pan-Fry Beef, Pork and Vegetables
500g mince beef
100g diced bacon
2 cloves garlic, diced finely
1 carrot, diced finely
1/2 small red capsicum, diced finely
1/2 zucchini, diced finely
1 cup eggplant, diced finely
100g pumpkin, diced finely
Extra virgin olive oil
In a deep fry pan, add olive oil. Add beef, bacon and garlic. Brown till fragrant. Add all vegetables. Mix well. Add a little water to prevent mixture from burning.
Cook for 10 minutes on high. Turn it down to low. Cover the pan and cook for another 10 minutes until fully cooked.
To aid in the iron absoption of this meal, offer oranges or any fruit with high vitamin c content.
This meal is suitable for freezing and re-heating in the micorwave.
