Recipe: Rice with Chicken and Vegetables

Yes, here's another meal made with rice in mind. If you have read the other blog posts, you will see that I have done it with fish and beef. Here's the one with chicken. My children had it for dinner on Sunday night and yes, you guessed it. They loved it!

Rice with Chicken and Vegetables
2 cups of Jasmine Rice
2 skinless chicken thigh fillets, diced dinely and marinated in 1 tbsp sesame oil
2 cloves garlic, minced finely
1 brown onion, diced finely
1 zucchini, diced finely
1 celery stick, diced finely
200g pumpkin, diced finely
1 litre reduced salt chicken stock
2 tbsps Extra Virgin Olive Oil

Method
In a deep stainless steel pot, heat on high. Add Olive Oil, all meat and vegetables. Brown well.

Add rice, mix well and add all the stock. Cook on high for 5 minutes and simmer slightly covered for at least 30 minutes. Viola! The meal is ready.

Special Instruction
This meal can be frozen and re-heated in microwave.

You may choose to use a potato masher to slightly mash the food for your toddler who has just started on lumpy textured food.
