Recipe for Toddler: Casserole of Lamb, sweet potato, pumpkin, mushrooms, rice, tomatoes and rosemary

Inspired by Charlotte and Daniel's love of sweet potato and lamb casserole out of a pre-packaged meal + strong flavours, I checked out the ingredients on the packet and came up with my own version. This was served at lunch today and they LOVED IT!

1kg lamb mince
250g sweet potato, cut into cubes
100g butternut pumpkin, cut into cubes
3 button mushrooms, diced
1 tbsp fresh rosemary, diced
1 tbsp tomato paste + 1/2 tbsp sugar
1/2 cup of jasmine rice
500ml chicken stock + 200ml water
Extra virgin olive oil

  1. In a deep pot on high heat, add olive oil and brown lamb, sweet potato, pumpkin, mushrooms and rosemary for about 10 minutes. Stir in tomato paste and sugar. Cook for another 10 minutes.
  2. Add chicken stock, water and 1/2 cup jasmine rice. Cook on high for 10 minutes. Simmer slightly uncovered for 10 minutes. Turn off the stove, cover the pot and leave it for 15 minutes.
This meal is suitable to be frozen and best to thaw overnight in the fridge for the next day.

Suitable to be reheated in the microwave also. Heating times vary - use your common sense! :-)
