This meal was inspired by Annabel Karmel's recipe of Beef Casserole. I have simplified it into a one pot meal because it's just easier!
We all know the importance of iron in early childhood development and the winter weather has also decended upon Brisbane. Hence what better way to nourish my cherubs and keep them warm but this all in one meal!
They ate it with gusto and asked for more! I hope you will try it someday with your own child / children too.
Ingredients (serves 4 for twins, 8 for singletons)
600g gravy beef / shin beef, cut into small cubes
1 long celery stick, cut into small cubes
2 small carrots, cut into small cubes
4 fresh button mushrooms, cut into small cubes
1 tin of whole tomatoes
2 tbsps tomato paste
2 tbsps flour
2 tbsps cranberry / redcurrent jelly
500ml beef stock
2 tsps fresh thyme
3 handfuls of small pasta shells
Extra Virgin Olive Oil
- In a stainless steel pot, add olive oil and thyme. Brown the meat for 5 minutes. Add all the vegetables. Mix well together. Add tomato paste and cook for 1 minute. Add flour and cook for 1 minute.
- Add tin of tomatoes, cranberry / redcurrent jelly and beef stock. Cook on high for 15 minutes and cook on low for 1 hour.
- Add pasta and continue to cook on low for 15 minutes.
This meal is suitable to freeze and can be re-heated in the microwave.
