Simple Recipe: Ox Tail Stew

This is such a simple meal. I am not joking and it tastes very hearty too. Some people are turned off by the fact that the core ingredient is Ox Tail however the flavour from this part of the beast is second to none. Here's my version of Ox Tail Stew, that's so simple, you can do it with your eyes closed!


Ingredients (serves 4 hearty portions)
12 huge ox tail chunks
1 brown onion, cut into quarters
6 sprigs of fresh thyme
4 celery sticks, into chunky match sticks
2 large carrots, into chunky match sticks
6 portobello mushrooms, cut into quarters
900ml of tomato sugo
500ml chicken stock
1 can of brown lentils
Spinach leaves, optional

Method
  1. Switch Slow Cooker to 'High' and add the the ingredients. Cover and cook for 6 hours.
Tips
Add as much spinach leaves as you like just before serving
You may serve it on a bed of rice (as seen above) / your favorite pasta / rustic bread
This meal may be frozen and re-heated in microwave
Cook this at least 24 hours prior to serving so as to allow flavours to develop
