Toddler's Recipe: Mini Meatballs with Pasta

Here's a meal that will go down well with the entire family, not just toddlers, especially on a cold and wet day like the one we experienced over the long weekend. This is super duper easy (all my recipes are) and oh so yum!

Mini Meatballs with Pasta serves 4 toddlers + 4 adults

600g lean pork mince, rolled into balls (yes no egg, no breadcumbs)
1 white onion, diced finely
1 large carrot, diced finely
1 large celery stick, diced finely
150g pumpkin, diced finely
900ml tomato sugo
2tbsps tomato paste
4 sprigs of fresh thyme
4 sprigs of oregano
2 tsps chicken stock powder
400ml water

Extra virgin olive oil
Spinach and grated cheese, optional
Pasta shells (for toddlers) / Spaghetti (for adults)

  1.  In a deep stainless steel pan, add olive oil and all the vegetables + herbs. Cook and mix well for about 10 minutes. Add tomato paste, mix well. Add tomato sugo, water and chicken stock powder. Cook on high for 5 minutes and simmer for 30 minutes or until vegetables are soft.
  2. Add balls of pork meatballs to the sauce. Simmer for 15 minutes.
  3. Serve with pasta mixed with spinach leaves (heat from pasta will wilt spinach) and top with grated cheese
  • Suitable to be frozen and re-heated in the microwave
