I was cooking a weekly batch of beef & pork bolognaise for the kids when inspiration struck and that's how this meal was created (minus the tomatoes, sugo, tomato paste and pasta)!
This creation looks familiar doesn't it? Fried rice. It is super simple to prepare and absolutely yummy on the tummy. This is a meal suitable for the entire family and I hope you will try it someday.
Savoury Duo Mince with Rice (4 toddler servings)
1 cup of Jasmine Rice
2 cups of water
1/2 tbsp chicken stock powder
200g lean beef mince
100g diced bacon pieces
1 handful of frozen vegetables (I used corn, peas and carrot)
1/2 sliced red onion, diced finely
1 tbsp soy sauce
1 tbsp water
1 tbsp vegetable oil
- In a small pot, put (part 1) ingredients at the same time. Cook on high and when the water bubbles, turn it down to low for 5 minutes. Turn off heat and cover. Let the rice absorb the rest of the liquid. The final outcome will result in slightly wet rice and this is good because that means, it will stick to the spoon which makes it easier for the toddler to spoon feed!
- In a deep fry pan, add oil. Fry onions for 5 minutes. Add beef and bacon. Stir the mixture around well for 5 minutes. Add the vegetables and soy sauce. Cook for another 5 minutes. Add water and simmer with a lid over the fry pan. This mixture is done when the vegetables are soft!
- Add cooked rice to meat & vegetables and mix well. Viola!
Suitable for re-heat in the microwave.
Good kept in the fridge for 4 days.
