{Sharing} Recipe for Toddlers: Bangers and Mash

I strive to incorporate 'essential elements' in every meal that I prepare for the children - protein, carbohydrates and vegetables. Bangers and Mash is a no brainer. It is so easy to prepare, kids eat it up and best of all, it is a meal that even the adults (like us) enjoy.
Here is my 'no brainer' Bangers and Mash - to feed 2 toddlers TWO hearty meals / a family of 4 for ONE meal:
6 Organic Beef Sausages (low fat and low sodium)
6 potatoes (peeled, cubed and boiled)
4 cups of frozen peas and corn
Rice Bran oil
  • In a large fry pan, spray a thin layer of rice bran oil. Heat to medium temperature. Place the sausages in the pan and cook for 15 minutes or until cooked through (depends on thickness of the beast).
  • In a deep pot, boil potatoes in salted water until soft. Drain away water and add milk + butter. Mash until light and fluffy.
  • In a microwave container, add frozen peas and corn. Add a little water and cook on high for 3 minutes.
  • Serve immediately. For adults, I love adding barbecue sauce + mustard + tomato ketchup. For the kids, I keep it plain.
If you have any leftovers (we don't), put it in a microwave container and keep it in the fridge for up to 2 days. To re-heat, bunk it in the microwave for 3 minutes! :-)
