{Recipe for the Family} Speedy Roast Chicken with Udon Noodles

Ideally, I would have preferred to post a photograph of the final product BUT this meal was wolfed down by everyone in the family before I could even say "Stop!" Therefore, I am featuring the ingredients instead.
I used to love creating and cooking meals in our kitchen. Having children changed all that. I still labour in the kitchen and it is all about creating meals with variety that is simple to prepare that yields maximum impact {no leftovers}!
Here is one of our new family favourites:
Speedy Roast Chicken with Udon Noodles - serves 4 and ready in 15 mins!
1 packet of Udon noodles, place in hot water for 1 minute & drained
1 free range roast chicken, use the meat (bones are for stock)
2 cups of frozen peas and corn
4 tbsps. of soy sauce
2 tbsps. of honey
1 tbsps. rice bran oil
  1. In a wok, heat the oil. Add chicken and vegetables. Mix well. Add Udon noodles, soy sauce and honey. Mix well. Taste. Add more seasoning to suit your taste buds.
Special notes:
  • Serve immediately
  • Can be re-heated in the microwave
  • Keeps well in the fridge for up to 2 days (if you have any leftovers)
