If you are responsible for most if not all the home-cooked meals for your family, I am certain you have a few go to meals that are dished out regularly that everyone in your family loves and will eat without any complaint.
This is one of my go to weekly meals. Pan fried salmon in my special marinate. It's very simple to put together, delicious in your mouth & on your fingers, everyone eats it all up PLUS it's nutritionally good for the whole family. It's a winner all round.
My daughter loves this marinate so much that she can be seen licking it off the container lid that houses the marinated salmon pieces. Yes, you read it right. She licks it off while there is still raw salmon in the container. It is that good.
This special marinate follows a 3-2-1 approach. Therefore, depending on how much salmon you intend on cooking, you can adjust the quantities of the marinate accordingly. Here goes:
Mags' Special Marinate for Salmon
3 tbsp Chinese Cooking Wine
2 tbsp Soy Sauce
1 tbsp raw sugar
- In a container that is large enough to marinate your salmon pieces, add all the marinate and mix well. Add salmon pieces, cover the container with a tight lid, shake it to ensure that all the salmon pieces are coated in this yummy marinate and refrigerate for at least 30 minutes.
- In a non-stick fry pan over medium heat, spray the pan with rice bran oil. Brush the marinate off the salmon pieces and pan fry them skin side down first for 5 minutes, cook the other side for another 5 mins (it all depends on how thick the salmon pieces are). Then drizzle the remaining marinate into the pan and turn off the heat.
