Short-Cut Recipe: Tuna Pasta Bake with loads of Vegetables

With the wet weather around us, it's time to crank up the fan forced oven for some hearty family meals that we all enjoy. I love meals that enables me to sneak in loads of vegetables, easy to prepare and oh so yummy to the tummy!

Here's my short-cut version of Tuna Pasta Bake with loads of vegetables. This recipe will satisfy 3 adults and 2 toddlers


Ingredients
2 cups of small spiral pasta
100g of pumpkin, diced into small pieces
1 zucchini, diced into small pieces
1 generous handful of fresh baby spinach, cut into thin strips
1/2 tin of cream corn
1 tin of 185g of tuna
1 jar of leggos brand tuna pasta bake sauce
3 generous handfuls of pizza plus cheeses

Instructions
1. Pre-heat your fan-forced oven to 160C. In a deep pot, add spiral pasta, pumpkin and zucchini. Fill water with a pinch of salt just to the top of the ingredients. Let it boil and it should cook in 10 mins.

2. Drain all the water from the pot. Add all the rest of the ingredients except the cheeses and mix well.

3. Pour all the ingredients from the pot into a baking dish. Top with cheeses and bake in oven for 20 mins.

4. Serve immediately on its own or with side salad. Any leftovers can be kept in the fridge for up to 2 days and can be re-heated in the microwave.
