Hearty Family Meal that pleases: The layering effect

There is something comforting and filling about pasta. In fact, the kids will almost gobble anything up if there is pasta in the mix and we love meatballs topped with melted cheese! Who doesn't???

Those sentiments fueled my creativity in the kitchen the other day and here is the step by step pictorial process for your viewing and perhaps salivating pleasure. This was made in individual bakeware and this meal can be put together in your trusty big baking dish for the entire family!

Step 1: Lay raw spinach on the bottom of the dish
Spinach cooks down to (almost) nothing and it is so good for all of us.

Step 2: Lay cooked pasta on top of the spinach and drizzle with extra virgin olive oil
Spiral pasta is brilliant because the sauce gets into the grooves and it is a great pasta for the kids to eat with their spoons.

Step 3: Lay cooked meatballs on top of the pasta

Step 4: Spoon mild zesty salsa over the meatballs
This is store bought and yes, the same store bought salsa out of a jar that we have with corn chips!

Step 5: Top with your favourite cheese(s)
We love our Pizza Plus Cheeses from San Remo (yes out of a packet) and it contains mozzarella, cheddar and parmesan cheeses. YUM!

Step 6: You can cover it with foil and put it in the fridge to be cooked later OR in the freezer for later in the week! 
As this was prepared just after we had concluded lunch, they were placed in the fridge to be cooked for dinner later in the day.

Step 7: Remove foil and spoon passata over 
Pre-heat the oven to 180C (fan forced) and cook it uncovered for 15 minutes.

Step 8: Dinner is served after 15 minutes in the oven!
This meal is quick and oh-so-tasty!

Step 9: Watch the children demolish their dinner in 15 minutes FLAT!
This makes my heart sing!! 


Ingredients for my meatballs without the use of bread crumbs
500g turkey mince
Generous dusting of garlic salt
2 tbsp soy sauce
2 tbsp chinese cooking wine
1/2 tbsp sesame oil
1 egg, beaten
Oil to pan fry the meatballs

1. In a large stainless steel bowl, combine all the ingredients
2. Roll out your meatballs and lay them on a plate. Refrigerate for 30 minutes.
3. In a large non-stick pan, add oil and pan fry the meatballs over medium heat. 
4. Once cooked, set it aside to cool and try not to eat too many before you put the meal together!
