One pot meal that stretches from lunch to dinner

Raise your hand if you cook for your family every day?
Raise your hand if you are tired of cleaning up after every meal?
Raise your hand if you want a one pot meal that covers the 3 main food groups?

Now, I think I may be able to help you in this regard because I too raised my hand. In fact, I raised both hands. Whether you are a stay at home parent or working parent, cooking and cleaning up is a never ending chore. Don't get me started on menu planning.

Most of our family meals are ONE POT MEALS because (1) they cover the 3 main food groups, (2) less clean up and (3) cooking in bulk means it goes beyond the one meal.

Here's my Go To One Pot Meal that takes us from lunch to dinner. Yes, you read it right. We eat the same one pot meal at lunch and again at dinner. If the weather is hot, we have this meal, cold. Yes, COLD from the fridge. This is how I roll on weekends.

Stir-fry pasta with chicken and vegetables
serves 4 adults and 4 toddler portions

1 packet of pasta (we love penne), cooked
800g chicken thigh fillets
1 brown onion
2 carrots
2 celery sticks
3 cloves of garlic
1/4 cabbage
200g mushrooms

Sauce combination: Soy sauce, honey, oyster sauce

1. In a large wok or deep fry pan and over high heat, add oil - onion and garlic. Saute until fragrant and not burnt. Add chicken and stir fry for 3 minutes. Add all the vegetables and stir fry for 5 minutes.

2. Add cooked pasta and mix well. Add the sauces and stir fry for 5 minutes until it is well-combined.

3. Serve it hot or cold.
