Recipe: Hearty Lasagne

Winter has certainly more than made its presence felt. At home, we are dressed our track suits and the blanket is our constant companion on the lounge. The oven is used with increased regularity to cook our meals which has the added bonus of warming up our family room! Here's one of my family's favourite meals.




Hearty Lasagna
Serves 4 adults 2 toddlers

The meat sauce
500g beef mince
500g pork mince
1 brown onion, diced
4 cloves of garlic, diced
2 celery sticks, diced
2 carrots, diced
4 sprigs of thyme
4 bay leaves
1 tin of lentils
1 bottle of Leggos brand tomato sugo
1 glass of red wine (I used 2012 shiraz cabernet)
1 tbsp sugar
Extra virgin olive oil
Garlic salt, season to taste

The bechamel sauce
40g plain flour
40g butter
2 cups of milk
1 cup of grated tasty cheese
1 cup of pizza cheeses
Salt, season to taste
1 more cup of grated tasty cheese for the top of the lasagne

The lasagne sheets
1 box of instant lasagne sheets


1.  Let's start with the meat sauce. In a deep pan over medium-high heat, add olive oil.  Add onion and garlic. Brown for 3 minutes. Add all the vegetables and mix well. Cook for 5 minutes. Add all the meat, ensuring that you break it up throughout the cooking process. Add 1 tbsp garlic salt. Cook for 10 minutes. Add thyme, bay leaves, lentils, tomato sugo, red wine and sugar. Mix well. Cook on high until it bubbles then simmer for 1 hour.

2. The bechamel sauce. In a sauce pan over medium-high heat, melt butter until foaming. Add flour, cooking and stirring for for 1 to 2 minutes. Remove from heat. Slowly add milk, whisking constantly until mixture is smooth. Return to heat and stirring for 10 minutes until the mixture thickens. Remove from heat and add all the cheeses, salt to taste. 

3. Time for assembly. In a 3 litre oven proof dish, spray the bottom of the dish. Add lasagne sheet (you may need to break the sheet to fit the bottom of your dish. I was too lazy and merely overlapped my sheets!), top with 1/3 meat sauce and coat with bechamel sauce. Add another layer of lasagne sheets, add another 1/3 meat sauce and coat with bechamel sauce. Add another layer of lasagne sheets, add the remaining meat sauce and coat with bechamel sauce. Add the final layer of lasagne sheets and top it with another handful of tasty cheese.

4. Into a pre-heated oven of 180C for an hour.
