Recipe: Slow cooked lamb shanks

I prepare dinner for my family every night and the meals are dictated by season as well as ease of preparation. One of my family's favourite is slow cooked lamb shanks. With the slow cooking over 6 - 8 hours, its delicious aromas fill our home which makes us salivate throughout the day and when I am ready to serve, the meat falls off the bone. Just divine. Do you suck the marrow like I do? Oh my, it is out-of-this-world.

This is a great meal to cook in advance and left in the fridge for the flavour to develop further over a few days. Mine was in the fridge for 3 days. Therefore, if you know that you are going to have a particularly busy day in the next few days, this is a meal you can serve on that day without any fussing in the kitchen.

Here's my super duper easy slow cooked lamb shanks and hope that you will try it for yourself sometime.

Slow Cooked Lamb Shanks serves 3 adults and 2 young children

4 lamb shanks
4 cloves of garlic,peeled and chopped roughly 
4 celery sticks, chopped roughly
4 bay leaves
4 sprigs of lemon thyme
2 carrots, chopped roughly
1 red onion, peeled and chopped roughly
1 tin of chickpeas
1 large tin of Heinz Big Red Tomato Soup
1 glass of red wine
1 glass of chicken stock 

1. Set the slow cooker on "high", add all the ingredients. Cover with lid. If cooked on "high mode", this meal will be ready in 6 hours. If cooked on "auto" mode and it will be ready in 8 hours.

2. When meal is ready, you have 2 choices. (1) Cool it completely and store it in the refrigerator for a few days for the flavours to develop further OR (2) serve it immediately with pasta / mashed potato / crusty bread / rice.
