Salmon is served up at least once a week and we have it in a variety of ways. Pan fried salmon served with mashed potatoes and steamed vegetables / crunchy cold salad / brown rice and vegetables / noodles with vegetables OR salmon in soup.
This week, our salmon meal was served with sides of Jasmine rice and Miso Soup with seaweed and tofu. The combination was absolutely delicious and my family ate it all up!
One Pot Atlantic Salmon Meal
serves 3 adults and 2 children
400g Atlantic salmon portions, skin on and seasoned with salt and pepper
4 cloves of garlic
4 fresh button mushroom, torn roughly
1 small handful of goji berries
1 small head of broccoli, torn roughly
4 tbsps honey
4 tbsps soy sauce
1/2 cup of shao xing wine / water
Extra Virgin Olive Oil
1. In a large sauce pan over high heat, add extra virgin olive oil. Add salmon portion and cook until brown on both sides. Add garlic, mushrooms, broccoli and goji berries. Stir gently until the garlic smells fragrant. Add all the sauces and water. Cook on high for 5 minutes and simmer it for another 5 minutes or until the salmon portions are just cooked and broccoli is still slightly crunchy.
2. Serve it hot.
