Recipe: Atlantic Salmon with Spaghetti

Salmon is one of our favourite seafoods. We love it for the taste, versatility and availability all year round. One of our favourite one pot meals is Salmon with spaghetti in a homemade marinara sauce. This meal is cooked and put together in a relatively quick time and while the sauce is simmering over the stove, you can get even get your laundry off the line - sorted - folded - put away!







































Atlantic Salmon with Spaghetti in Marinara Sauce
Serves 6

Marinara Sauce
1 brown onion, diced finely
2 celery sticks, diced finely
2 carrots, diced finely
2 garlic cloves, diced finely
3 tins of diced tomatoes
1 tbsp tomato paste
2 tbsp balsamic vinegar
1 tbsp brown sugar
2 tbsp tuscan / italian dried herbs in a jar
Extra virgin olive oil
Salt and pepper to taste
1/2 tin of water

Salmon
600g fresh Atlantic Salmon, sliced with 2cm thickness

Optional
1 fresh lemon
4 handfuls of frozen peas and corn


1. In a pot, add olive oil over medium heat. Add onion, celery, carrots and garlic. Cook for 2 minutes. Add tomato paste, brown sugar, balsamic vinegar and herbs. Mix well. Add tins of diced tomatoes and 1/2 tin of water. Cook on high and let it simmer for 15 minutes.

(You have 15 minutes to partake in laundry or help your children with homework)

2. When the sauce has been simmering for 15 minutes, turn off the heat and add sliced salmon and cover with lid. Walk away and do not open the lid for at least 15 minutes.

3. In another pot, cook spaghetti or your favourite pasta in salted water until al dente.

(You have another 15 minutes to unstack the dishwasher or have a glass of wine)

4. Put the spaghetti in your favourite bowl, ladle over the marinara sauce and salmon slices. You may wish to squeeze some lemon juice over the meal just before serving - adds a refreshing taste to the meal.
